Tortillas, anyone?

One thing I really enjoy learning more about is how to bless my family with healthier food. A few months ago we bought a grain mill, and it has been one of the wisest choices that we've made. Now I bake all our bread products with freshly milled grain,while the nutrients in the flour are still intact. It tastes great, constipation has been eliminated, and we can freely eat bread knowing that it's good for us. It has even improved my husband's energy level, allowing him to cope with his RA pain better.

Here's a recipe we all enjoy. If you don't have freshly milled flour, this is still healthier than store bought tortillas with tons of preservatives.

Ingredients
4 cups flour
1/3 cup healthy oil (coconut or olive oil)
1 cup really warm water
1/4 -1/2 tsp salt
1-2 tsp sugar or honey (optional)

If using coconut oil that is still solid mix it with flour until it resembles coarse crumbs, then add everything else.


If using a liquid oil simply add everything to the flour and stir. After initial stirring, continue to mix with your hands until it is a smooth dough.



If it's very dry add a tablespoon or two of water. If it's sticky add a tablespoon or two of flour. Divide this dough into 16 balls. Place the balls back in the bowl, cover with a cloth and let sit for 10 minutes.



Meanwhile, heat a cast iron skillet or electric griddle to a very hot temperature. I turn my electric griddle to 400. Form each ball into a circle with a tortilla press or a rolling pin, and place immediately on the griddle. Flip the tortilla when 1 or 2 large bubbles begin to form, and cook for a couple more minutes.



Remove from the griddle and wrap in a moist kitchen towel. The moist towel will help them remain flexible. Enjoy within a couple days. If you want to reheat these, wrap them in a moist towel or paper towel while reheating.

Remembering the Important

As each day passes from dawn to dusk, it's easy to get sidetracked by the urgent and neglect the important. As I Am Going through each day I am striving to remember the important:

Love the Lord with all my heart, soul, mind, and strength
Love my husband and children
Love my neighbor
Share the gospel
Disciple

These are the tasks the Lord has set for me to joyfully accomplish as I walk through each day with my eyes turned toward eternity. For by grace I have been saved through faith; not of myself; it is the gift of God, not as a result of works, so that I cannot boast. For I am God's workmanship, created in Christ Jesus for these good works, which he has prepared beforehand so that I might walk in them.
